To measure analytically dynamic contrasts. The meter will tell you if your ff really is that much stronger than your mf.
Also good to practice tunes which cover a wide pitch range. The lower register on instruments tend to not be balanced well dynamically with the middle and upper ranges. The decibel meter will objectivelly show you this.
As with all gadgets, use them sparingly to address specific issues then get back to the music.
