Symphony Orchestra:
Prokofiev - "Romeo et Juliette" suites (one of the few chances in orchestral literature that the tuba has to sexually arouse the listener without blatting FFF)
Verdi - "Requiem" - devasting the audience with those bone-crushing "G"s
R. Strauss - "Ein Heldenleben" [baritone horn part], and listening to a really talented horn/violin pair tear into the solo parts during a performance
Wagner - "Gotterdammerung" (similar motive for performance to Verdi: permission to crack plaster, as long as it is done in a controlled manner, and while seated)

Winds:
Holst Suites (not to listen to, but to play on either tuba or baritone horn), and Fillmore marches (His Honor, Noble Men, etc.) performed at brisk tempi by small one-on-a-part bands consisting of top-level performers (to play OR listen to). I am particularly fascinated by "His Honor", due to that fact that the principal "motiv" in that march is simply "the interval of the 1/2 step", and it is perhaps one of the best-composed gimmick-free marches ever written (no great tuba part or anything).
