My main doubles are piano, guitar, and bass, along with alto sax, trombone, and euphonium. My strangest doubling gig was once when I had a few friends in a sax quartet, and the tenor sax player had to bail... so I sightread the part on euphonium, lips tired beyond belief, and it was very fun, even though the piece was way too hard for me to sightread.
Staying sharp on a double just requires regular playing. If you're anything like me the phrase "social life" is foreign, and you can play all the time at home (with parental permission). If your time is less easy to come by, then just goof off a little whenever you do have some spare time. Play whatever you'd normally see on a gig, maybe something a little more difficult, but have fun with it nonetheless.
