Shostakovich complete symphonies on Brilliant Classics. Rudolf Bashai/Cologne Radio S.O. - sells for about $40 is all. Excellent playing/excellent sound quality.

Complete Mahler symphonies - either Bernstein/NYPO on Sony (the 8th was done in London), or Klaus Tennstedt/LPO on EMI. Both of these are budget priced boxes. Both are more than perfectly adaquate.

Complete Bruckner symphonies - either Jochum/Staatskapelle Dresden (EMI), or Georg Tintner on Naxos. Both of these are budget priced boxes as well.

Prokofiev 5th - Slatkin/St. Louis (RCA); Maazel/Cleveland (DG Panorama series); Previn/LSO (EMI - with "Fletch"); Levine/CSO (DG); Masur/NYPO (Teldec), or even the Naxos one is just fine.

Prokofiev: "Romeo & Juliet" - Previn/LSO (EMI); Maazel/Cleveland (Decca)

Prokofiev: "Cinderella" - Previn/LSO (EMI); Ashkenazy/Cleveland (Decca)

Berlioz: all orhestral and choral works - anything conducted by Colin Davis will be just fine

Carl Nielsen complete symphonies - Blomstedt/S.F. Symphony (Decca).

Needless to say, there's just tons of other stuff that one should hear. These are just the ones that quickly come to mind.
