It kind of depends on the audition and the piece. For instance, I don't know of any orchestral excerpts commonly asked that would require dropping notes. However, there are some band excerpts such as Fingal's Cave and Overture to Oberon where dropping notes is a common practice and necessity. The trick is to drop a note without the committee even realizing you dropped the note.
