It was never made clear in the fast moving credit rolls that the CSO played all selections except Rhapsody in Blue, which was played by the Philharmonia with Levine as conducting soloist. Leopold Stokowski was credited as the conductor of Sorcerer's Apprentice from the 1940 soundtrack, and appeared in his famous handshaking scene with Micky Mouse, but I didn't see a credit for the Philadelphia Orchestra. The question of tuba player is moot since Sorcerer doesn't call for tuba. For the soundtrack CD, it was decided that Levine would do a modern stereo recording of Sorcerer with the Philharmonia. As in the 1940 film, the orchestra you heard was not the orchestra you saw. But at least the surrogate tubist in 2000 didn't hold a Sousaphone. Maybe further probing will reveal whether these were real musicians, or actors and models. Sort of like were those real apes in the opening scene of 2001 A Space Odyssey, or a bunch of dancers from the Royal Ballet?
