If you're talking about orchestral excerpts that would appear on an audition, there are always the big 5:

Wagner - Prelude to Die Meistersinger
Wagner - Ride of the Valkyries
Prokofiev - 5th Symphony
Berlioz - Symphonie Fantastique
Mahler - 1st Symphony

Then there are the others that you always see:

Respighi - Fountains of Rome
Berlioz - Overture to Benvenuto Cellini
Strauss - Ein Heldenleben
Mahler - 5th Symphony
Bruckner - 7th Symphony

There are others but these are perennial favorites. For operas, there are a few that really deserve attention:

Verdi - Rigoletto
Strauss - Salome
Wagner - The Valkyries
Wagner - The Flying Dutchman
Floyd - Of Mice and Men

These are just the ones that jump off the top of my head. There are many other works that have parts that require serious practice to do well but I tried to list works that have pretty constant amounts of work. I'm sure others will mention works I didn't that are just as worthy of your attention. Good luck!
