Most of the time it's to put a decent finish on it by trimming damaged metal, easier and faster than refinishing. Personally, I don't think there's much change in the sound when trimming that (typically) 1" thick edge of metal off of a really flat pancake.

Remember though, that the "conversions" you speak of are so uncommonly-done today (BB-to-CC with a 22"+-bell horn to start) that its pretty much moot from a practical/reality side. I suppose its interesting though (maybe like Howard Dean is interesting)
