I think that when you get down to the differences you are talking about, it's kind of like the reasons you instantly like one person, but not another. Something just does or doesn't rub you the right way.

Perhaps you could play a different type of horn for a big name pro, and he would say he loves the sound, and then go on to tell you what it is he loves about the sound. But when you get in front of an audition committee of, say, a horn player, a violist, a bassoonist, etc., the hornist could probably tell you why they like the sound. For the rest, they probably fall into that category of "I just really like the sound." But don't necessarily know why, since they have been too busy examining resonace qualities of different woods to worry about metallurgy. At that point, it's a matter of personal tastes.
