There was definitely a live group recorded for the soundtrack, though Zimmer mixes in synthesizers to modify the sound. As far as players go, Zimmer usually has a huge brass section, and in the case of Gladiator, had four tubas. Tommy Johnson was principal, and then you had the other studio regulars filling in the other spots (which changed from session-to-session).

As a side note, because Hans Zimmer composes entirely at the keyboard, he is able to compose music for the movie and record it before the soundtrack recording sessions. This allows him to score the trailer with music from the actual movie instead of using music from other movies (Robin Hood:Prince of Thieves, Gladiator, The Mummy, etc. are all popular soundtrack choices for movie trailers).
