The "gooseneck" as it is often called is officially called the upper mouthpipe. The part that the upper mouthpipe goes into is called a lower mouthpipe.

As far as bits, just about all sousaphone players use them. The sousaphones are designed to use the bits however they are not essential on a Conn. On King sousaphones the bits are pretty much essential, as the mouthpiece won't fit directly into the upper mouthpipe, or the first bit.

Are far as sound, you need to play on a regular basis. As is with anything that requires the use of muscles (in this case facial muscles), the muscles need to be worked.
