I agree that it is cheaper to buy a silver plated mouhtpiece and have it plated. That is in fact what I did. A local custom jewler did it for about $20 each. I'm lucky in that I don't have any dings in the rims, so I think I'll investigate replating more before I make a final decision.
As far as why gold, a friend of mine had his plated and I liked the feel so much that I decided to have it done myself. If anyone just wants looks, however, some of the "signature" mouthpieces have a combination of gold and silver plate that looks as expensive as they are priced.
