I think you are on target when you say that a pro who only ocassionally uses a euphonium would get along fine with a 321.
As I posted a few months ago, WINDPLAYER magazine surveyed 10 leading trombonists in the Hollywood studio scene. Several of them used a Yamaha 321 when euphs were called for in recording film scores.
