If it's just for your own purposes, you really can't beat a Minidisc recorder in terms of affordability. Then, get a decent stereo mic (Audio Technica and Rode both make fine ones - Sony makes one as well but it is very cheaply constructed and very noisy, in my opinion). You should be good to go.
