The notion of NOT applauding between movements is a relatively new practice.

Between movements at the premier of Beethoven's Violin Concerto (for example), the soloist demonstrated the knack he'd developed of playing party-piece ditties on his Violin UPSIDE DOWN (best way in my opinion)... Performances of major works were not the stuffy, solemn affairs we have today apparently. I wouldn't like to say whether that is a good thing or not, however it is clear to me that the ring of a cellphone adds little to all but the dullest of works.

BTW, at the last night of the UK Proms, the audience in the Albert Hall know exactly when to join in and more importantly, very much when to keep SILENT. They are a cultured audience almost exclusively.
