I think that people can effectively describe how an instrument plays, for that individual. To say differently is to say that people shouldn't bother reading books because movies have been made of the same subject. There are different ways to convey the same information.
On the other hand, I agree with your second point completely. How I feel about the way two instrument models compare, has almost no relationship to someone else's playing experience. I would go further and say that my experience with two particular samples of a tuba model has little bearing on the comparison of two other samples of the same models, due to variations from instrument to instrument.
Find a horn that you are comfortable playing, and practice.
