I experience the same type of peaking during the day. I don't always feel my best until I have played for an hour or two that day. If I have a performance which is taxing, then I would still put in that much time, but leave a 4 hour period or so before the performance where I did not play. If it is a recital, then try to program the tunes so the first one doubles as a good warmup.
