Why not just record to hard disk. You can then take the files and mix them on the computer.The leading software products are Protools by degidesign (the most expensive)and for mac, Logic Audio less expensive and owned by Mac and Nuendo for the PC. The digi 001 is very good but is limited as to number of tracks of conversion and mic preamps. If you want to record more than 2 traacks at once (say a brass quintet) then the motu 896 is very nice with 8 tracks of converters, mic pres, and phantom power. There are many good mics which are not stereo mics. If you use a diffferent mic for each stereo tack then you can experiment with different mic placements such as ORTF, MS, spaced pair and many others. Another issue you need to deal with is sampling rate. Generally the higher the rate the better the recording but also the more computer speed and power you need.
