For example, if I play my Eb sousaphone, but I use CC fingerings, I am essentially transposing up a minor 3rd. The possibilities are not endless, but they are certainly numerous.

your only problem with your logic of a tuba emsemble playing sax music is that a sax quartet uses an Eb instrument for the alto voice, so the Eb tuba would be playing higher that the 3rd voice which would be most likely an euphonium. The low voice would ALSO have to be an Eb tuba in order for your plan to work.
