You have to consider the audience. Your average rock fan goes to see their favorite rock act. How else can you explain their screaming all through a concert? They actually hear very little of what the band does. Even if the band is capable of reproducing what was on the recording, the fans won't notice. It's the fact of their being at the concert plus the visual aspect that graps the rock fan.

Symphony fans go for the listening experience. The orchestra has to sound good live or the audience won't give the support. You can't count on people coming just because you're a famous ensemble because if you don't play well, you won't be.
