Sure, Bach works well -- he was a church guy, you know. The church quintet I used to play in sounded completely appropriate whenever we played Bach (or Gabrieli, for that matter).
Where's a source or two for the Hilgers arrangements you mention?
BTW, if you have a quintet, and get a chance to play a steady (monthly?) gig at a church with a real live pipe organ, go for it -- it's a real kick to play along during the hymns!
