I don't see a whole lot of advantage in using doubling with the intent of improving the physical aspects of playing.
But, I know that being on a different instrument can expose a player to different playing styles more thoroughly than just staying with one instrument. For example, playing trombone in a decent jazz band will usually immerse a typical tubist in interpretation & articulation techniques that he/she probably wouldn't experience anywhere else.
