I probably misinterpreted your question, but to me "gig"=business.
With a "fun" quintet, all of the players can easily tolerate each others' shortcomings, etc., and take all of the time that is required - perhaps mixing the experience with other social fun such as group dinners out with spouses, etc.
With a "gigging" quintet, I would think the idea is to get in, deliver quality, be gracious, collect the check, and get out...and with a minimum of rehearsal.
I would think the easiest way to solve the problems in your inquiry would be to put the strongest possible personnel in the various chairs of your quintet.
Again, I probably misinterpreted your questions.
